One of our most popular duck egg products is our balut (Filipino) or hot vit lon (Vietnamese).
This is a duck egg that has been incubated for 17 days and removed from the incubator for boiling and consumption.
It is considered a delicacy and highly nutritious.
We remove the eggs from the incubator, candle them to ensure quality, and ship or mail them the same day. We do not cook the balut.

A friend of ours, Margaret Magat, has written the only book we know of on Balut.
Drawing on interviews, participant observation, reality television programs, travel shows, food blogs, and balut-eating contests, she examines balut production and consumption, its role in drinking rituals, sex, and also the vampire-like legends behind it.
Her book also looks at the impact globalization and migration are having on cultural practices and food consumption across the world.
