We are now selling our duck eggs under a new brand, Olinday Farms. These are the same great duck eggs you are used to eating but with a new name. We feel it is important to keep our Metzer Farms' brand focused on day-old ducklings while developing a stand-alone brand for fresh duck eggs. Olin Metzer bought the first flock of ducks in our family over 60 years ago and we wanted to celebrate him and the "all day egg" with Olinday Farms duck eggs.

We have been selling fresh duck eggs for years as many people feel our duck eggs are unbeatable for baking and pastries. In addition, many of those allergic to chicken eggs can often use duck eggs instead. We would consider it prudent to consult with your physician, however, before using duck eggs if you have a severe egg allergy. Our breeder ducks eat base ingredients of soybean and corn in their feed so if this is a concern with your allergies, please take note.

The only disadvantage of duck eggs is the whites do not beat up as easily as chicken eggs, but there are ways around this - see below. Jumbo chicken eggs average 2.5 ounces per egg; you can see that almost all of our duck eggs are larger than chicken eggs.

The eggs we ship are less than 30 hours old. We have a specially designed foam packaging for each bundle of 20 eggs which protects and insulates the eggs. Once you receive them, they can either be stored in the refrigerator or freezer. Under refrigeration (34 to 40 degrees F.), eggs can be kept safely for up to six weeks. By sealing freshly laid eggs in plastic bags, their refrigeration life can be lengthened to two months, as the bags help prevent moisture loss from the egg. Duck eggs have a longer shelf life than chicken eggs.

Freezing is an excellent way to save eggs. By following strict sanitation precautions in preparing waterfowl eggs for the freezer, we have been able to keep them for over twelve months successfully. However, because frozen eggs of any type can harbor bacteria that may cause acute intestinal infections, it is safest to store them no more than six months and restrict their use to baked or long-cooked foods.

Wash the eggs with warm water and soap, and then break into a boiled mixing bowl. Blend the whites and yolks with a fork, being careful not to beat in air bubbles. To prevent the yolks from becoming excessively thick during storage, add either one-teaspoon of salt or one tablespoon of honey to each pint of eggs. The last step is to pour the batter into thoroughly clean ice cube trays or freezer containers, leaving 1/2 inch headroom to allow for expansion. If ice trays are used, remove the egg cubes soon after they are frozen solid; seal them in a clean container and place immediately in the freezer. Once frozen eggs are thawed, they should be used within twenty-four hours. Do not refreeze thawed eggs.

I developed an allergy to chicken egg whites in my mid-fifties. Shocking and scary times! However, I was informed that sometimes people with an allergy to chicken eggs do NOT have an allergy to duck or quail eggs. Metzer Farms was the first place I found. The eggs are carefully packed, I've only ever had a couple of them break in transit. Fast shipping, great service - I'm a fan for life.

Thank you guys for offering bulk buying I have a chicken egg allergy where I for the longest time didn't think I could eat anything with eggs. ever but once I discovered that I could eat duck eggs like normal. I have an allergy to chicken eggs, and I was so happy to have found Metzer /Olinday Farms! I placed an order for 40 eggs, and wondered how the shipping would go, since I live a few hundred miles away. I can't say enough good things about my first experience with them! The eggs were delivered in a timely manner, and the way they packed the eggs was just perfect! Not one egg was broken or damaged, and they're fresh and very delicious. I'm now able to enjoy fried and scrambled eggs for the first time since I was a child. It sounds like a such a simple thing, but it's the little things that bring us joy. After I finish this review, I'm off to place my second order. Thank you, Metzer Farms for making this chicken egg allergic woman very happy! :)

I can't even begin to say how thankful I am that I found Metzer Farms. I am someone else who is allergic to chicken eggs. About twelve years ago I found I could eat duck eggs. I started ordering from Metzer Farms about ten years ago. Duck eggs are very seasonal where I live. The quality is always great and I have had very few issues over the years. I'm so happy to find that I can order duck eggs. Sometime in my 40's I all of a sudden out of the blue developed and allergy to chicken eggs. For so many years I had to go without eggs until I heard many with Chicken allergies can still eat duck eggs, I was so happy to hear this, but finding someone in my area that sold duck eggs was a futile task. Nobody had them even those places like Fresh Market etc that said they carried them never had them!! I was diagnosed with a complicated allergy disorder a few years ago and chicken eggs made me sick. I took a chance on duck eggs and we've been in baking heaven ever since! They taste great, stay fresh for a long time and I've never had any crack in transport. My local grocer will have duck eggs only during spring and summer, so I most often purchase from Olinday/Metzer Farms during the fall and winter. It's also reassuring that if you buy too many eggs, there is a simply way to freeze them to longer storage. I absolutely recommend these duck eggs! Theresa
